What is Tuscan Style® Chocolate?

Tuscan Style chocolate is not the result of a special ingredient, or a unique manufacturing method, or a secret recipe unearthed at a Florence villa.  It is no one thing, but the wondrous outcome of many elements choreographed under the skilled hand of our chocolatier, Diane Pinder.

Diane’s Tuscan Style concept emerged from her immersion in the Tuscany chocolate experience during her visits with chocolate masters in and around Florence.  It was there, from the bustling streets of Firenze to the quaint towns of Visignano and Pistoia, that Diane gleaned the extraordinary craftsmanship of her Italian artisan peers.  Each chocolatier insisted on only the best chocolate, locally grown natural ingredients, and masterful blending of these elements into nuanced culinary creations.  Each chocolatier, working with the same sense of commitment, revealed his personal perspective through his ganaches, covertures and decorative finishes.

Returning home, Diane had already decided to bring this same extraordinary experience to the United States and set about the task.  Over the following months, she sourced ingredients as did the Italian masters, refining her combinations until each piece occupied its own space, balancing sweet and savory, salt and spice, style and presentation.  As Diane completed the foundation of this renewed chocolate sensibility, she refused to use any artificial additives or preservatives, abandoning commercially sourced finishes for pure vegetable colorants to expose the soul of each hand-crafted jewel.
